Quick & Easy Broccolli and Cheese Soup

INGREDIENTS:
     
  • 4 cups chopped broccolli  
  • 1 Tbsp oil  
  • 1/2 chopped medium onion  
  • 2-3 cloves minced garlic  
  • 1/4 cup instant rice  
  • big handful of spinach  
  • 2 cups water (approx)  
  • 2 cups milk (approx)  
  • 1/2 cup Cheez Whiz  
  • 1/2 cup grated cheddar, mozz, marble, whatever you have  
  • salt and pepper to taste

DIRECTIONS:

In a large pot, saute onion and garlic in oil. 

 

When they are soft, add broccoli and water. Bring to boil and simmer until broccoli is tender.

 

Add rice and spinach, cover and remove from heat. Let stand 10 mins.

 

Using a hand blender in the pot, or pouring broccolli mixture into a blender, puree until smooth.

 

Pour broccoli puree back into pot, add milk to thin to desired consistency and reheat. DO NOT BOIL Season to taste.

 

Stir in Cheez Whiz to melt.

 

To serve:    Top bowl of hot soup with a small handful for grated cheese.  Serves 6
