Pectinase

seems to be used to break down the white pith that surrounds the segments.
You can still can Mandarins with the pith on, in which case they will have a more bitter taste.
If you take the time to remove as much pith as you can then you will not need the Pectinase.
It is obtainable from restaurant supply stores and possibly health food shops as well as the home brew stores as advised in earlier posts.
Most recipes on the web do not use it.
