We just have an old ice cream pail on our counter that we line with newspaper (usually flyers, juat not thr shiney kind). No lid. We just toss things in and take it out and dump it in the composter at the back of our yard. The yard composter is a 3- bin system made of scrounged pallets. At any given time, 1 is being actively filled, one is cooking and 1 is done or nearly-done. We fill them year-round and keep leaves from the fall to layer as we go.
We fill our house bucket in 1-3 days typically. No meats or fats, but any fruit or veggies scrap, or plain grains, coffee grounds, tea bags, egg shells etc. The newspaper lining also goes into the bins. The newspaper absorbs liquid and keeps it from getting stinky and makes it easier to dump out.
Flies can be an issue during tomato canning season. They come in thru the window screens if I have the bucket too close to the open window. The simple solution is to just move the bucket and take it out daily lol. And then set out fruit fly traps made of apple cider vinegar.
We're a family of 7, and because so much of our waste is actually composted we set out very little actual trash. My kitchen trash can takes a week to fill up and it's maybe a 15L can? My trash smells way more than the compost because it sits longer and has meat in it.
