My husband has been talking for years about a recipe that his mom used to make at Christmas:  
Had a "caramelly" middle like a butter tart  
Definitely had a graham wafer crust  
Had shredded coconut in it  
No raisins  
I have Googled to no avail but think I have had this myself...it is very much like a buttertart square but need the coconut and graham wafer component....does anyone have a recipe like this?

My Grandma makes that. Sure is delicious.

Sounds a bit like Magic Cookie Bars. Try googling that perhaps.

She loved the taste of graham’s crackers so she always used them for base with the melted butter and sugar and used a square baking pan.  
Then she just made her butter tart recipe and she used coconut in place of raisins (because she didn’t like raisins ). lol poured it over top crust and baked it.  
At Xmas time she’d sometimes add some of the chopped candy fruit to make it look Christmassy.  
Not sure if that’s what your looking for but she called it butter tart squares .

Go with a Butter Tart Square recipe, and instead of flour, use the graham crumbs for the flour. Omit the raisins and put coconut on the top. The eggs and sugar will bind it. It's a near never fail recipe!  
I never make as sweet as recipe calls for.
