The roots

are the bits used and can be dug up anytime, however the best will be young roots of this years growth, otherwise they will be woody.
In cultivation you would dig all the roots in late autumn and then replant short 3-4 inch portions upright in holes 10 inches deep. You then fill the holes with soil.
Beware that the roots raw are very hot and can burn the mouth and lips.
