A proper butcher for sure will have them, but you will likely need to pre-order. I know I've gotten liver in the past when I've boughten quarters and sides of beef.
Now I'm wondering where those cuts go when they process the animals if people aren't buying them.
I usually use Tendercuts on 18th, but there's Obermeier's on Rosser as well. Plus Henry's.
The other place to enquire is East 40 Packers. They have mostly pork it seems, but they have beef as well I'm pretty sure.
