What do you cook for your family after a day at work.

I am looking for recipes of what you like to cook for your family after a day of work. Do you cook ahead? the night before? or do you have something tried and true you whip up after work. I work during the day and after picking my 18 month up from daycare, it's 5:30 then I have to cook. By the time I do that, she's not hungry and I'm exhausted. I've done some slowcooker things...it's just hard to do everyday. Here is a recipe I made today and we found it rather good. I'm excited to hear about all your wonderful recipes!
Creamy Pesto Chicken Bake (from Campbells soup)
2 cups cubed cooked chicken
2 cups cooked penne (I used rotini)
1 cup fresh sliced mushrooms
1/2 cup diced tomatoes (I used one chopped fresh and 1 can of my homemade tomatoes - drained)
1 can Campbells Cream of Celery soup
3/4 cup water
1/3 cup prepared pesto (I used Classico Sundried tomato pesto, but I have used the regular basil pesto)
1/4 cup pine nuts (I skipped this as I didn't think would be suitable for a toddler)
3 tbsp bread crumbs melted with 1 tbsp marg/butter
1. Combine chicken, pasta, mushrooms and tomatoes in shallow 2 qt baking dish.
2. Whisk soup, water and pest and stir the mixture into the chicken mix.
3. Sprinkle with topping.
Bake at 350F for 30 minutes or until bubbly hot.
