Does anyone know of any courses offered in the area on home butchery, bread baking, preserving, etc. I've taken the kitchen genius courses with Reta and loved them and would like to do more of these sort of things to expand my kitchen/pioneering skills.

As for preserving, I taught myself from a book. It's not at all hard, just make sure you use a reputable source (I used a Bernardin book) instead of some of the dodgy recipes on the internet.  
 
Bread baking is also easy to learn by simply following directions/tutorials. I make pretty much all the bread my family eats.

I agree with the bernardin book. It's how I taught myself. For bread, I kind of cheat. I use it through the first rise, then shape it, let it rise, and put it in the oven. Bought the machine to use it right through, but the loaves were a weird shape.

for the replies! I do need to get that Bernardin book. Have heard lots of good about it.  
I've taught myself a fair bit of preserving and bread baking too, I guess I'm looking for more confidence from having insight from a pro. And to try other new things without investing in a lot of tools myself that I may only use once.  
I forgot about Homesteader Fest, I've dreamed about it in years past so hopefully it'll work out!
