A head gasket leak usually has to be quite bad before it will turn the oil milky. The coolant will leak in after the engine is shut off (low pressure in cylinder, high in cooling system). When it does, the coolant (being heavier than oil) sinks and when you start the engine, all the oil turns milky. Condensation forms in the space above the oil and sinks into it (as on your dipstick), but with condensation there is a lot less moisture so it burns off and doesn't contaminate the oil as badly. If the engine does heat up normally, I would check the PCV system. I would still get it looked at, but with the information given I would say there is no head gasket leak.
