I think I recall that the average parrot changes owners 7 times in the course of its life. It's good that you're reaching out and asking questions, because these birds are very demanding.
I have no African Grey experience, but I do have two tame cockatiels, which are nowhere near the level of crazy that a big parrot brings to the table. All I can say is that the reason I have two cockatiels is that when I only had one, he had to be on me ALL THE TIME, pooping on me and chewing up my shirt collars, and while it was awesome to have that bond, it was also really intense. Parrots don't have an off switch, and they will always tell you exactly what they need in that moment.
Do a lot of reading. Bird people are fanatics and there are blogs and info pages all over the internet. Also, go to a pet store and just hang out with the parrots. Petland in Winnipeg has big parrots you can ask to play with. Do this for months before you commit to getting one.
