We are getting a kitten in the new year. We are looking for recommendations on what to feed the little guy. I know from prior experience that Siamese are prone to kidney issues and males are susceptible to crystals in the urine. Is there a food that would be best to feed that would help eliminate some of that risk?? Also, a food that would decrease the shedding? He's short hair but anything may help?

For food feed a high quality wet food is best to prevent crystals. Everyday. If you cant afford strictly wet food i would suggest a mix of both.  
For shedding you will need to brush everyday. They sell special combs to help de shed them.

Have a persian that is prone to crystals so she gets soft food each day, augmented with water to make it the consistency of apple sauce (with her flat face - she has a hard time eating too, so it helps her eat it if if is runny)  
 
She loves her hard food though, so she gets lots of that left out too. The kind we use we get at Best West - though I cannot recall right now what brand it is. It is Royal Canin or one of those - it is called "urinary", whatever it is.  
 
The other thing we did was get a fountain waterer. She seems to drink better from the fountain so she drinks more.

I feed my almost 2 year old male cat that we rescued acana pacifica cat food, and his coat is shiny and healthy, he hasn't had any health problems ever since I've been using it, plus he really loves it too, he will snob any wet food I buy him I've given up on wet food altogether, just cause he doesn't like it and he's got no health issues, so I'm not really worried if he doesn't eat it.. and he loves water, has since the day we found him, my vet said as long as he drinks his water I shouldn't worry about wet food!! We bought a Furninator (seriously, that's what it's called) on Amazon or at Pet Valu. It's $40-$50 for the small brush, but it's AMAZING. Our cats have hated all other brushes. It's gentle but super efficient. You'll be amazed how much fur it's grabs onto with hurting them.  
 
As for food, lots of wet cat food, keep the water bowl clean and full, and you can even give them lactose-free vanilla yogurt. The Humane Society gives all their cats a bit of yogurt everyday to help with their digestive systems. Most groceries store sell plain/vanilla lactose free yogurt.
