The best time for a person to learn a new language is as young as possible.
Not only are they sponges as you suggest, French Immersion has made it very easy for my kids to pick up Spanish as they are very similar languages. So now instead of being bi lingual, my kids are well on their way to being trilingual. The only downside is that unfortunately the focus on English is less than perfect in FI and I have found myself correcting their grammar a bit (but sadly, my kids still have far better English grammar than a lot of people today - it is a big irk of mine)
To the OP - definitely there is a need for conversational French courses in Brandon. I have spoken to many people in my time since my kids began Immersion and it comes up a lot.
You might want to speak to the Parents for French Brandon chapter head who I am fairly certain is a parent from Ecole Harrison (if it is who I think it is still). Call the school and they might be able to give you contacts.
They (PFF) had a course that ran here recently - I really wanted to take it but it conflicted with work.
I am waiting for another chance to take the course.
