Gravy - help!

I suck at making gravy. It looks okay, but it's not very tasty..lol. I make it in the roaster using the drippings and potato water, and I mix flour and cold water to paste. I use salt and pepper and seasoning salt. I keep it on a medium boil, stirring the whole time, for about 5 minutes.
What am I doing wrong??? I would love some advice on how to make a simple but tasty gravy that you'd actually want to eat.
