I know zero about kayaks but I would like to have one for only purpose to move around in the water and stay on it with flipping or rolling in water or rapids. The ones that roll easy are they stable also or do they tend to flip if you know how to keep control and loose balance. I have seen on MEC site call fluid over 5 feet and 25lbs but could I use this just kayak in lake or river.  
I do not know meaning of shapes in kayaks: some are longer, narrower, heavier, some are really round at the bottom.

I am looking for a watercraft for doing photography from. I understand that kayaks are more stable than canoes. I have never used a kayak. Is there some place I can try a kayak? How different are they to use compared to a canoe?

Head down to Stream 'N Wood. They sell them, can answer your questions, and also hold events where you can try them out a few times a year.

Although I don't know much about Kayak's I purchased my Canoe from Stream N Wood and it's an Old Town, I believe Stream N Wood mostly carries Old Town products so I'd recommend checking out http://www.oldtowncanoe.com/kayaks/ they special ordered my canoe directly from Old Town USA because they didn't have any at the time. Stream N Wood also has trial days out at Minnedosa Lake quite often which is worth looking into.  
 
Canadian Tire also sells Kayak's http://www.canadiantire.ca/en/sports-rec/marine/kayaks-canoes-paddle-boards/kayaks.html nothing against Canadian Tire as I do quite a lot of shopping there but you'll probably get better service at Stream N Wood.
