VyOS (OS-not firmware), or PFSense (not firmware, FreeBSD-not Linux)
However, Ubiquiti's routers are based on VyOS, for great prices, so it's hard to justify not using them, unless you need some really beefy hardware for your router. If you need layer 7 filtering, ideally that should be done on a different system anyway.
OpentWRT (LEDE) for Access points, and the open source version of CT to manage. But again, it's hard to justify the cost v.s. Ubiquiti APs for this. Just the time required to flash OpenWRT on to all the APs makes Ubiquiti more cost effective.
For Residential routers+APs:
OpenWRT (LEDE), but again a cheap Ubiquiti router + APs usually make a good rock solid solution here.
