I recently bought a second hand Samsung s7.  
I factory resetted, and it tells me to put in the correct email and password.  
The person I bought it off already left town, I’ve spent money for this phone.  
Please help.

With your Galaxy S7 turned off, press and hold the Power, Home, and Volume Up buttons at the same time.  
Keep holding down Power, Home, and Volume Up until you see ‘Recovery Booting’ at the top of your screen. When you see that, then you can let go of the buttons.  
Now please wait a moment while it boots into Recovery Mode.  
Once you’re in Recovery Mode, you will see a list of options.  
Scroll down using the Volume Down button until ‘Wipe Data/Factory Reset’ is selected.  
Push the Power Button to select this option.  
It will ask you to confirm.  
Press the Volume Down button to select ‘Yes’ and confirm the reset.  
So, now your Samsung Galaxy S7 is reset and as clean as a whistle.

So after the wipe can I just do a regular factory reset?

That is the factory reset. Once you do that it should be like new out of the box and require you to fully set it up including language and wifi and other options

It’s Factory Reset Protection.  
I want to know how to bypass it.

If the seller wont help you with it, as that is the easiest way, then you either need to reflash android onto the phone (not the easiest and can cause a lot of issues) or there are steps online about how to get around it using an OTG cable and installing an APK to get around it. Again not an easy option. APK is made by RootJunky, and it is not guaranteed to work.  
The factory reset protection is only easy to remove if you have the password to the original gmail account. I would start by attempting to contact the seller.

Man should not have bought this phone, can’t get ahold of them.

Sounds like they possibly sold u a blacklisted phone or a stolen phone.

If I read the linked article properly. It sounds like the seller didn’t go and unlink their google account or take off the password/pin protection before resetting the phone.  
 
From that posted link about Factory Reset Protection:  
““Here is the main thing to keep in mind. You must disable FRP before you erase your smartphone, if you’re planning on selling it or giving this device to someone else. If you don’t do this, the next person will see this message on the screen:  
“This device was reset. Sign in with a Google Account that was previously synced on this device”  
If this happens then you will have to give the new owner your password, and nobody wants to do that.”  
 
Further down that page:  
“So, now your Samsung Galaxy S7 is reset and as clean as a whistle. If you remembered to disable ‘FRP’ then it is ready to be sold or passed to the next user.”  
 
If the new owner is saying it’s asking for log in info, then the previous owner didn’t disable important things properly before selling it.

Well this isn’t good at all geez
