Air exchanger and humidity

I have an air exchange system at home and a control knob that I don't quite understand. Hopefully someone can shed some light.
On the knob control, there are settings from clockwise, temperature in the summer to cold winter (-40 C or so). Where should I set the indicator on the knob at?
It seems my house is very dry inside. My hands dried up very fast and my skin itches with dry skin. How can I prevent that?
