For me personally, I would choose a language that seems appealing to you, regardless of practicality in real usage.
Many people learn languages as a hobby, even if they aren't expecting to need to use them on a daily basis. This is the case for me. I personally chose to study Korean, because I find the writing system appealing and I think that it sounds beautiful. On the flip side, learning vocabulary and grammar is quite difficult, and I don't expect to actually have to speak it unless I decide to travel to Korea.
Really, you just need to choose based on what matters to you. Do you want it to be practical so that you can use it every day? I would say French or Spanish in that case because there are many people locally who speak those languages. Do you think that a certain language is beautiful? Any language is difficult to learn, so I wouldn't personally choose based on perceived "simplicity".
