...because they're CLOSED on SUNDAYS, even though they're providing a food choice for a busy 7 day a week airport.
As for the Brandon airport, maybe a restaurant isn't in the works, but I don't think the idea of a canteen or the like isn't far-fetched.

To that airport nor had Chick-Fil-A, but I absolutely agree with your temper about internationals airports having stores/food services that are not open during operating hours of the airport.
I have been to huge international airports like LAX and LAS or Minneapolis and the same is true of all of them. Las Vegas has an entire wing that shuts down and is not open for it's peak time. The Allegiant wing is not open in the morning until after many of its departures have left. And if you do not know that in advance, it is too long a walk to go back to another Starbucks...
LAX was all open, as was Atlanta, but those are two of the biggest in the US and it was mid day.
Minneapolis is a ghost town at night.
It is strange to see hundreds or thousands of travellers in a place and the airports do not require a business to be open more readily.
