My heads still spinning trying to wrap my head around all of the new of the past year or so. Big changes and will be interesting to see what else the market has room for.... but blue-sky would love to see:
- Mongolian grill. Closer to “huhot” than “mongos” if I was allowed to be both a begger and chooser
- another sandwich place that isn’t Subway/Quiznos. Use those place lots, but a few days in Minneapolis opened my eyes to fact that there’s opportunity for a whole lot more variety in this space
- maybe this plays into my prev suggestion in some way, but a full bakery. The kind people are lined up out the door for at 8am. Mouth watering varieties of cinnamon buns, large variety of different fresh breads out every morning by 8am, other pastries you look at and are powerless to say ‘no’ to. We might have that already as Chez Angela grows and evolves out of their new spot, they seem very enthusiastic to fill the need and already seem to have built a good following!
- there was a time in this kind of threads I’d say something like a Whole Foods, but after having spent some time in a Minneapolis one recently I’m not convinced that the Mall Sobeys doesn’t already hit the mark closely enough.
