Coming from the industry and knowing both facilities, I'm sure if you requested that they save you some, I'm sure they would.
Suet, or leaf lard, isn't something that is normally salvaged, but special requests for some with be honored.
I would suggest East 40 only because they slaughter a few days a week, where as Tendercut's, supplier, Prairie Rose Meats, only slaughters one day per week.
Also if you go to East 40 in person and ask, that may be better than calling.
