I made fish chowder from it). I don't know why they don't sell white fish fillets though. White fish are incredibly difficult to debone. My FIL sometimes catches them and brings me fillets, but always warns me there's still bones. He tells me to grind it, which I do. The bones are small and will break down well in the grinder. They make excellent fish cakes.
