Why no reservations on the weekend?

I have to wonder why restaurants won't take reservations on the weekend? Can someone explain that to me? Because I called today for a 7pm reservation and they said they don't take them on the weekend. So now I'll go there, wait for a table, get the table likely at 6.00pm and then just sit there nursing a drink until the rest of my group show up at 7pm. By not taking reservations they lose at least an hour from my table.
Maybe someone in the trade can explain this practice to me?
