I find the undercoat isn't a bad idea. HOWEVER, generally speaking, I wouldn't get it done right at purchase. Buy the vehicle, and go to Ming or a reputable dealership and have it done.
I've bought a new vehicle and opted for undercoat at signing and when i actually looked at the job it was terrible. It looked like it had taken the person doing it about 3 min. They missed insides of body panels, holes etc.
Make sure if you do get it, get it done ASAP. You want the vehicle as new and as close to factory cleanliness as possible.
I have the 3m clear film on the front of my vehicle, up the hood a ways and bumper. It helps keep all but the largest stone chips off, but it's not cheap unless you're good at doing it yourself.
As far as the other protectants, I have no experience with them only to say that I DONT THINK they'd be worth it. Some others might chime in with better experiences.
