I have a 2004 ram 1500 with the 5.7 will an engine and tranny out of a say 2005-2010 bolt right in or are all of the accessories different?

You can swap everything out, but stay with the original wiring harness and connections. At some point you'll probably need a Dealer Flash for the Transmission as the tone wheel is  
different.

What's a dealer flash

The tone wheels are different, before 2010 the crankshaft is a 32 tooth, and after 2010 56 tooth. If I''m not mistaken, 2009 was the last year for the 32 tooth setup. A dealer flash will be in the future if you use the 2010 pcm. FLASH =: to reflash the ecu (dealership will know what this means id hope lol) ....btw no mechanic here, just did a ton of research on these questions, as i was gonna do a 4.7 magnum swap and put in the 5.7 hemi

Manufacturers liked doing revisions annually, semi annually, let's move this, change that, etc. This is why you get asked for the VIN when buying parts.  
 
TCU, BCM, ECU, may all change. "Ya got the 1500, 2500, 3500, long box, short box, 2wd, 4wd, reg cab, extended cab, tow package?"
