I had my tonsils out about 16 years ago, and it was the best thing I ever did. I was older to be getting them out, so figured recovery wouldn't maybe be so good. I was totally fine, in and out of the hospital within a few hours. I was eating normally within a day or two. I really didn't have a lot of pain, but was just cautious with what I ate at first so I didn't irritate my throat.
If you are regularly getting infections, I can tell you for sure that the pain and how crapoy you feel from that is 10 times worse than having your tonsils out.
As for complications with the surgery, it is routine surgery, generally outpatient, and there shouldn't be too much risk of complications. All surgeries have risks, but something like a blood transfusion I would think would be very very rare with tonsil removal. You have to lose quite a bit of blood to be transfused, and there should be very minimal blood loss at the sight of the removed tonsils.
