You're right about that!
When we cut cable 15 or so years ago, we had NO paid services originally. We just watched over-the-air *back when that was still a thing). We found we watched lots of YouTube videos on our laptop, so we bought a Roku box so we could cast to the TV.
Today, we watch quite a bit of free TV (Roku channel is actually my favourite), and we permit ourselves to have 2 paid services. We currently have Disney+ and Netflix. If we want something else, we have to drop one of the others. We also splurge on a month or two of TSN during the Grey Cup playoffs.
So my suggestion would be to cut everything, and start with free stuff. Then, add things as you find you miss then. You might find you will miss less than you think! And consider swapping/caps. There are no barriers to signup/dropping services, so you can subscribe to one service, binge that one series you want, then cancel and move on.
