If you're wanting to whip it for whipped cream, buy a can of premium coconut milk (highest fat content you can find) and put it in the fridge upside-down overnight. The cream will rise to the top and solidify. Once you flip over the can to open it the cream will be on the bottom, then you can easily pour off the liquid and you're left with just the cream.
If you're using it for some other purpose (like maybe for fudge or a pina colada, where you need it to be thick but not whipped) coconut manna may work. You can buy it in a jar at Two Farm Kids. Coconut manna is pureed coconut flesh so it has a coconutty texture. It isn't silky like coconut cream.
