I grew up in Winnipeg, and I wholeheartedly agree not to stay anyplace close.
Parking is atrocious at Rainbow Stage. Be prepared to walk. You're covered but outdoors, so dress appropriately for the weather (and mosquitoes, depending on the time of day).
Yes, CanadInns are generally a good bet. I think there's one on McPhillips attached to the Casino. You could scoot over from there pretty easily too.
You have a decent choices in the core too. Downtown to the stage is about 15 minutes during non-rush-hour (straight up Main St). Inn at the Forks is apparently amazing, and the Fort Garry is interesting. There's also a Hampton right on Main Street like another said, it''s fairly new.
Whatever you do, don't stay at the Green Briar Inn.
