What’s the best beaches for experiencing a beautiful sunset on as well as swimming in the ocean. Thinking Mexico or Dominican area. Also Does anyone know which resorts were unharmed by the hurricanes?

Negril...amazing

hands down.

Playa Norte, Isla Mujeres, Mexico. 3 Colours of blue and one of aquamarine water where the Caribbean and Gulf waters meet. Not to mention icing sugar white sand beach. I have been going there for 15 years .

The beaches at Cayo Santa Maria in Cuba are exceptional. Blue and clear with an all white sand bottom. If you head down the beach there are some great places to snorkel. Downside is that it is Cuba, so the hotel ratings are generally about 1 to 2 stars higher than what they really are.  
 
I also liked the beaches near Puerto Plata in Dominica, but found you are pestered to death by salesman. Water was rough with several days of red flags so no swimming. Don't know if they even had green flags for the beaches....I never saw any there.  
 
Last couple years we have been going to Mayan Riviera. Great services, but the beaches are either very or somewhat rocky. Lots of debris in them as well.

-40, who isn't thinking about beaches! We went to Brisas Covarubias in Cuba, the beach is amazing and water doesn't get deep fast, you can wade out probably 200 yards. Not crowded. The resort isn't the most luxurious and is miles from anything, no other buildings on beach as far as you can see. Also means any excursions are far and relatively expensive. Read a couple recent reviews and no hurricane damage was mentioned  
We went to a 5 star in Mayan Riviera couple years ago. Great food and rooms but the beach isn't great and is crowded.  
Barbados has amazing beaches, rarely is close to hurricanes. All inclusives are very expensive there, we rented a condo and loved it. Long flight, rarely direct. Low crime, high standard of living and medical system.

Jamaica was un-touched by any of the storms of 2017. If you are looking for the best beach and the best sunsets then Negril Jamaica is your answer. The Seven mile beach is amazing with almost 5 miles of it unbroken. You can walk the beach for miles. Pull in for lunch at one of the many bar/restaurants. Stay for a few beers if the vibe is good, move on if it's not. Lots of all inclusive resorts but if you do that, you are kinda trapped on the property. Best way to see the million dollar sunsets is to be out and about.  
I did see a couple of Negril vacation rentals in the ebrandon classifieds.

No problem with weather and was great. We stayed at the Ocean Coral Maya. Beautiful and very affordable. 4 Star Plus. Had a great time.
