For us it’s such a long haul trip in one day that it’s hard to schedule in a lot of time for stops in between. Grand Forks or Fargo for a nice meal at a different franchise along the way. Huhot Mongolian Grill has a restaurant in each city, a unique eating experience if you’ve never eaten at one (better than Mongos in Winnipeg IMO)
If you want something that you don’t see every day, a quick spin past “The Ralph” arena in Grand Forks is kinda cool (have a read into the history of “Ralph” first for a little context to be sure it’s your thing but I think it’s an impressive “palace”)
Minneapolis itself is nice for a few days. Outlet malls in Albertville just West of the city, of course the mall, and their downtown is a pretty cool interconnected maze of indoor walkways between buildings so that you don’t have to deal with the cold (just don’t expect much downtown on weekends if the time we were there was any indication but maybe someone else can add more context about weekends if say there’s an event going on)
as far as outdoors we went during the summer and so got to enjoy the park around Minnehaha Falls along with the zoo but imagine there’s still lots to do in the winter too! We’re hoping to go back within the next year now that the new Paw Patrol section is open in the Mall amusement park.... only got a teaser during the summer when it was under construction!
Enjoy!
