We are thinking of flying to the east coast for a week in summer. I would be very interested in where people suggest going and specific hotels to stay at, as well as what to do while in the area. I imagine you would have to rent a car while you were there but would you stay in one location as your home base or would you go to different provinces?  
I'd love any advice on this!

I was going this year coming up too lol.. hotels change with each visit and staff so use trip advisor to guide you with that by the reviews. As for places to go and see .. the main places like Peggy’s cove, lunenburg, Cabot trail in cape Breton are all great. Carters beach on the south shore is gorgeous. In Halifax citadel hill and the waterfront are great places, if you love great pepperoni go to brothers deli on Agricola street! Best deli/butcher shop ever! The Annapolis valley is nice to check out. On the north mountain there’s margaretsville/port George/port Lorne/ and morden bay of funds shorelines that are beautiful. Digby and Annapolis royal are cool places to check out with the military references. Pei is a great province and you can’t beat going to the Anne of green gables site. I personally didn’t find much in New Brunswick I cared for. Hope this helps

I would recommend checking out : Fundy National Park - walk on the ocean floor. Ask around as to where to buy fresh lobster off the boat(if that is something you like). New River Beach - St. Stephen beautiful beach. Saint John Market - everything and anything. Can also see the big cruise ships. Magnetic Hill. Reversing Falls. Kings Landing. Ganong Chocolate Festival(seasonal) Try out some  
Mrs. Dunsters doughnuts and Donairs.  
I am sure I will come up with more

We stayed at Maples Cavendish Cottages and the stay was wonderful.

Gave us the opportunity to see Anne of Green Gables and it was near Shining Waters Family Fun Park, Ripleys's Believe it or Not, mini-golf, beaches and more.  
 
We did rent a car. Cavendish PEI was really nice.

East coast is beautiful and lots of beautiful things to see. I would recommend renting a car and touring around. Where are you flying into? Must sees: Bay of Fundy/Hopewell Rocks in Moncton, Peggys Cove, the drive through Cape Breton is breathtaking along with driving through PEI. Cavendish in PEI is gorgeous and is like Clear Lake. If you’re into history there’s the Immigration Museum and Maritime Museum in Halifax, and a tour of Alexander Keith’s. There’s Annapolis in south Nova Scotia and Louisburg Fortress just as you get into Cape Breton. There’s also lobster fishing boat tours. If you go to PEI take the ferry one way and come back across on Confederation Bridge. Have a fun time!

LOVED Halifax, I think it’s my favourite place in Canada! Lots to see and do downtown/by the harbour, took a tour to Peggys Cove. There is not a lot of area for parking (have to pay for parking at hotels) so we cabbed it to the hotel and used the bus to get around. I’ve rarely used public transportation in my life but everyone there is so nice and helpful, it was easy to use. We stayed at the best western chocolate lake. We then rented a car and drove to PEI, stayed in the cavendish area at an awesome inn. Went to a lobster supper, found a drive in movie theatre, cavendish beach, awesome shops in the area, drove around and saw some lighthouses and spent our last day at Charlottown!
