Thinking of driving a motorhome down south in the winter months for the first time. Any tips for stopping for the night in below zero temps until we reach warmer temps? Assuming many RV parks will be closed so will rely on the generator for power but any tips for water usage? Any advice is appreciated!

It is possible if you have heated storage, heated tanks, and good insulation on your plumbing.  
I know people who have travelled with a large motorhome this way, but having hauled various travel trailers to the south, it is best to winterize the unit, and hotel it until you reach warm enough temperatures to safely "open up" the home for use.  
The temperatures you can encounter vary greatly from year to year, and it might be safer and cheaper in the long run to exercise caution, and spend a few nights in a hotel.

So for water, just manage your water use by keeping the water in jugs inside the RV. To avoid freezing up in the black and grey water tanks just dump a jug of rv anti freeze in each.  
 
And just dump water into the toilet for flushing

We have routinely travelled to the southern US in our RV in the winter. We do not add water. We use the truck stop showers (modest fee) instead of staying in a hotel. We typically have cereal for breakfast in the RV, sandwich for lunch in the RV, and dinner at the restaurant of whichever truck stop we stop at for the night. Turn on the heat in the RV the day before you leave to the lowest setting so you don't have a frozen mattress when you go to bed. We do run the fridge for keeping our food. Two good group 27 deep cycle batteries will run our furnace all night (assuming you have a battery isolator in your motorhome or you unplug your trailer from the vehicle towing it). We run the generator only from when we park for the night until we go to bed.
